First a mixture of eggs, salt, soy sauce and mirin is prepared. Some of the mixture is poured into a special tamagoyaki pan. After some of the egg has begun to set, it is rolled into a log. More mixture is added to the other end of the pan so that there is the rolled section on one half and the new egg mixture on the other. After the new layer sets, it is rolled again. This is repeated until all the egg is used up.
